Whole Wheat Carrot Avocado Bread
Whole wheat carrot avocado bread. I was originally intending to make a sweet bread, but I was on the phone while baking and left out the sweetener. Whoops! However, this happened to be a happy accident because this made a delicious (and healthy) savory whole wheat bread filled with many vitamins and nutrients.
Carrots, as we know, are a great source of beta carotene which is beneficial in proper immune system function and eye health.
Avocados are also very nutritious; they are a great source of healthy fats and fiber and contain over 20 different vitamins and minerals.
I have been eating this bread every morning toasted with peanut butter and topped with fruit, a sprinkle of cinnamon and a drizzle of honey. A perfect balanced breakfast to start the day!
Ingredients:
2 ¼ cups whole wheat (or gluten free alternative) flour
2 tsp cinnamon
1 ½ tsp baking powder
¾ tsp baking soda
½ tsp salt
½ tbsp applesauce
2 egg whites
2 tsp vanilla extract
1 tbsp coconut sugar
½ cup mashed avocado
¾ cup + 2 tbsp non-fat milk (I used unsweetened almond milk)
2 cups grated carrots
Directions:
Preheat oven to 350 degrees
In a medium bowl mix all dry ingredients
In a separate bowl mash avocado, add egg whites, milk, applesauce, vanilla, and carrots
Slowly add wet mixture to dry ingredients and mix until all incorporated
Pour batter into a greased or lined loaf pan
Bake in the oven for 40-50 minutes (until toothpick comes out clean)
Let cool before slicing
