Cardamom Nut-butter Chocolate Chip Cookies
A twist on the classic nut butter cookie. Cardamom is a great spice, its similar to cinnamon in its warming qualities and is used in both sweet and savory recipes. Cardamom has been used for centuries as an ancient remedy due to its impressive medicinal properties. According to some studies, cardamom is high in many antioxidants, some which have been shown to reduce inflammation. Additionally, it may help lower blood pressure due to its diuretic effect and help treat bad breath because it can potentially kill common mouth bacteria and prevent cavities. Cardamom is one of my favorite spices and adds a really delicious and fun twist on these nut butter cookies!
Ingredients:
1 cup of favorite nut butter (I used peanut butter but you can use whichever you prefer)
1/2 cup oats
1 egg
1/3 cup sweetener of choice (I used coconut sugar but brown sugar or maple syrup are a good alternative)
1/2 tsp cardamom
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt (if using unsalted nut butter)
1/3 cup chocolate chips
Directions:
Preheat oven to 350 degrees
In a medium bowl, mix all ingredients (except chocolate chips) until dough forms (if batter is dry add about 1/4 cup of milk)
Fold in chocolate chips
Using a spoon or scoop, form cookies and place evenly on a prepared baking sheet
Bake in the oven for 10-12 minutes
