Chocolate Zucchini Donuts

I don’t know about you, but I have been craving a lot more sweets lately. This has a lot to do with our body’s reaction to stress. Stress and anxiety trigger our body to crave high fat and high sugar foods. We don’t need to completely avoid these cravings (I mean these are crazy times, we need to do what we can to get through it) but instead finding healthier ways to indulge them (when we can).

Want a fun, delicious and healthier option?  Try these chocolate, chocolate chip donuts. Not only will they satisfy that sweet craving, but they are made with hidden veggies adding some extra nutrients to your diet, it’s a win-win!

Ingredients:

  • ¾ cup flour

  • ¼ cup cocoa powder

  • ½ cup coconut sugar (or other sugar of choice)

  • ½ tsp baking soda

  • ½ tsp salt

  • 2.5 Tbsp applesauce

  • 1/3 cup milk

  • ½ cup shredded zucchini (squeeze out liquid into dish towel)

  • ½ tsp vanilla

  • 1 tsp apple cider vinegar

  • ¼ cup chocolate chips

Directions

  • Preheat oven to 350 degrees

  • Mix all dry ingredients together in a bowl

  • Add wet ingredients and mix until well combined

  • Divide batter evenly into a greased donut tin

  • Sprinkle with chocolate chips

  • Bake in the oven for about 12 minutes

  • Let cool completely before removing from pan
