Cinnamon Raisin Bread

One of the best ways to start the day is with a combination of complex carbs and protein. This bread is not only gluten free but it’s full of fiber and protein from the oats and almond flour. Additionally, cinnamon has many antioxidant properties including being an anti-inflammatory. Enjoy it on its own or top it with some nut butter and banana and you have a well balanced start to your day.

Ingredients:

  • 1.5 cups almond flour

  • ¼ cup oat flour

  • 1/8 tsp salt

  • 1 tsp baking soda

  • 1 ½ tsp cinnamon + 2 tsp for topping

  • 3 eggs

  • ¼ cup apple sauce

  • 2 tbsp water

  • ¼ cup honey + 2 tbsp for topping

  • 1 tsp vanilla

  • ¾ cup raisins

Directions:

  • Preheat oven to 350 degrees

  • Line a loaf pan with parchment paper

  • Mix all dry ingredients together in a bowl

  • In a separate bowl mix egg, apple sauce, water, honey, and vanilla

  • Combine dry ingredients and wet ingredients

  • Fold in raisins

  • Pour half the mixture into the loaf pan

  • In a small dish mix honey and cinnamon together

  • Drizzle half the honey mixture over the batter

  • Pour the remaining batter into loaf pan

  • Drizzle remaining honey/cinnamon mixture over the top

  • Bake in oven for 40 minutes

  • Let cool and enjoy!
