Hidden Veggie Breakfast Cookies

I know that it can sometimes be difficult to get in the recommended amount of veggies for ourselves and our families. I also, personally, have a major sweet tooth, so I figured, why not create sweets that also have nutritional benefits. These cookies are made with cauliflower, zucchini, oats and nut butter making them a healthy cookie option that can be enjoyed any time of day! The oats and whole wheat flour are complex carbs filled with fiber. The nut butter provides a good source of protein and cauliflower and zucchini are filled with many nutrients and antioxidants.

Ingredients:

  • 1 cup oats

  • 1 cup whole wheat flour (to make gluten free, sub for almond or preferred GF flour)

  • 2 cups of cauliflower florets

  • 1 zucchini

  • 1 egg

  • ¼ cup nut butter

  • ¼ cup honey

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 banana

  • 1 tbsp coconut oil

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 1/8 tsp salt

  • ½ cup chocolate chips

  • Optional Mix Ins: raisins, chopped dates, nuts

Directions:

  • Preheat oven to 350 degrees

  • In food processor, blend cauliflower until creates flour like consistency

  • Grate zucchini into a towel and squeeze out excess liquid

  • In a large bowl mix all dry ingredients, cauliflower and zucchini

  • In a separate bowl mash banana and then mix in remaining wet ingredient

  • Pour wet ingredients into dry ingredients and mix until combined

  • Fold in chocolate chips and/or other optional mix-ins

  • On a cookie sheet lined with parchment paper scoop mixture into balls and then press down to flatten

  • Bake in oven for 15-18 minutes

  • Let cool and enjoy!

** Optional step:  instead of mixing the chocolate into the batter, I melted the chocolate in the microwave and then drizzled it over the cookies once cooled
