GF Double Chocolate Oat Bread

I don't know about you, but I have a major sweet tooth and love having something sweet with breakfast. However, I know the importance of starting the day with a good balance of protein, fiber and complex carbs and often breakfast sweets are not the most nutritious. However, this oat bread is not only delicious but its filled with protein, fiber, complex carbs and just lightly sweetened with maple syrup which makes it a great and healthy start to your day.

Ingredients

  • 1 cup of oats

  • 1 ripe banana, mashed

  • 2 tbsp unsweetened cocoa powder 

  • ½ cup plain Greek yogurt 

  • ½ cup unsweetened apple sauce 

  • 3 egg whites 

  • 1 tsp vanilla extract

  • 2 tbsp maple syrup (or sweetener of choice)

  • 1/8 tsp salt

  • ¼ cup chocolate chips 

Directions

  • Preheat oven to 375 degrees

  • Line an 8 inch loaf pan with parchment paper

  • Mix all dry ingredients together in a bowl

  • Add in all remaining ingredients except chocolate chips

  • Fold in chocolate chips 

  • Pour batter into loaf pan

  • Bake for 35-40 minutes
