Watermelon and Tomato Salad

The perfect summer salad! This salad is not only refreshing and delicious it’s also filled with lots of nutritional benefits. Did you know there is an antioxidant in tomatoes and watermelon called lycopene. Lycopene is what gives these fruits (and other fruit), their red color. There are also many studies showing that it COULD protect our skin from UV damage and sunburn. Lycopene has been shown as being efficient in fighting cell damage, in particular fighting inflammation from UV ways. It has also been connected to preserving beta-carotene in the skin which has also been shown at being effective in providing protection against UV damage.   

Although research is very positive in the UV protection benefits of Lycopene, it does not replace sunscreen. It’s important to protect our bodies from the inside and out!

Ingredients for Salad:

  • About ½ of a small Watermelon

  • 2 cups of cherry Tomatoes (I used heirloom cherry tomatoes, but any kind will be great!)

  • 1 small cucumber, seeded and diced

  • 1 cup Blueberries

  • 2/3 cups of crumbled Feta

  • ½ cup fresh Mint (can substitute with basil or cilantro)

Ingredients for Dressing:

  • 1-2 Limes

  • 1 Tbs. Honey

  • 1-2 Tbs. Olive Oil

  • Salt and pepper to taste

Directions:

  • Dice up your watermelon, tomatoes and cucumber and put in a large bowl.

  • Add blueberries and Feta

  • Chop or tear the mint and sprinkle on top

  • For the dressing: In a bowl or mason jar, mix the juice of a lime, honey salt, pepper and olive oil and mix until well blended

  • Pour the dressing over the salad, serve and ENJOY!
