Vegan and GF Mint Chocolate Brownies (with Hidden Veggies)

I don’t know about you but I have a major sweet tooth and can’t end a day without some chocolate. These brownies are not only delicious and chocolaty but they packed with nutrients. One of my favorite ice cream flavors is mint chocolate chip so that is what inspired these brownies, however the mint is optional. You can also add nuts, M&Ms or peanut butter chips.

As we all know, spinach is a very nutrient rich food filled with many vitamins and minerals. Don’t be scared (or weirded out) of the spinach, it does not change the flavor it’s just an easy way to get some extra nutrients into your favorite foods.

Ingredients:

  • ¾ cup almond flour

  • 1/3 cup cocoa powder

  • ¼ cup non-dairy milk (can use regular milk too)

  • 1/3 cup apple sauce

  • 1 cup fresh spinach

  • 1/3 cup maple syrup/honey/sweetener of choice

  • ¼ tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

  • 1 tsp vanilla

  • 8-9 mint leaves (optional)

  • ¼ cup chocolate chips

 

Directions:

  • Preheat oven to 350 degrees

  • Place all ingredients except chocolate chips in blender and blend until smooth

  • Fold in chocolate chips

  • Pour batter into a greased or lined baking dish

  • Bake in the oven for 35-40 minutes

  • Let cool completely before slicing

  • ENJOY!
