Chocolate Blueberry Granola

I asked my 4-year old nephew the other day what his favorite foods were, I was looking for some new ideas and wanted to make something inspired by him. He told me his favorites were chocolate and blueberry so after 4 attempts, this granola recipe was created!

This granola is full of protein, fiber, vitamins and minerals and low in sugar! it’s a great snack on its own or a topper to your yogurt, banana or peanut butter toast. Jake's Inspired granola Is delicious! I should look to the toddlers for more of my cooking inspirations

Ingredients:

  • 1.5 cups oats

  • 1 cup puffed rice cereal

  • 1/2 cup O’s cereal (optional, can also just use more oats but I like the different textures)

  • 1/2 cup nut butter (I used crunchy peanut butter)

  • 1-2 tbsp coconut oil

  • ¼ cup honey

  • 1/3 cup cocoa powder

  • ½ cup fresh blueberries

  • 1 tsp vanilla

  • ¼ tsp salt

  • ½ cup dried blueberries (optional)

  • Optional Mix In: Nuts, shredded coconut, chocolate chips

 

Directions:

  • Preheat oven to 320 degrees

  • Line a baking sheet with parchment paper

  • In a large bowl mix oats and cereals

  • In a saucepan add nut butter, honey, coconut oil, cocoa powder, fresh blueberries and salt. cover and let cook until all melted and mixed together, stirring frequently. If its too thick and clumpy add a bit more coconut oil but as the blueberries pop it should loosen up the mixture (should only take 4-5 minutes)

  • Turn off heat and add vanilla

  • Pour mixture over oats and mix until all combined

  • Pour mixture onto a lined baking sheet and then press down to try and make an even layer

  • Bake in oven for about 25-30 minutes (mixing/flipping halfway through so it doesn’t burn)

  • Remove from the oven and let cool

  • Break up granola into a bowl or bag and add dried blueberries (and any other mix-ins you like)

  • Store in an airtight container
