Green Monster Strawberry Muffins

Green Monster Strawberry Oat Muffins. With all the strawberry picking everyone has been doing lately, I was inspired to make some strawberry muffins. Strawberries are not only delicious but have many health benefits. They are packed with vitamins and minerals, they are particularly high in Vitamin C and Manganese, fiber and have very high levels of antioxidants. These muffins are also filled with hidden veggies, the spinach may change the color of the muffins but I promise it doesn’t change the taste! These muffins are healthy and delicious and something you can feel good about feeding your family.

Ingredients:

  • 2 cups oats

  • 2 egg whites

  • 1 cup strawberry Greek yogurt (can use plain but I like the little extra strawberry flavor)

  • ¼ cup coconut sugar (or honey)

  • 2 cups raw spinach

  • 1.5 tsp baking powder

  • 1/2 tsp baking soda

  • ½ cup fresh strawberries (chopped)

Directions:

  • Preheat oven to 400 degrees

  • Line or grease muffin tins

  • In a blender add oats and pulse a few times to start breaking down the oats

  • Add all remaining ingredients except the strawberries to the blender and blend until smooth (try not to overblend)

  • Fold in chopped strawberries

  • Divide batter evenly into muffin tins

  • Bake for 22-25 minutes

  • Let cool completely before removing from tins

  • Enjoy!
