Roasted Beet Hummus
Hummus is great as a snack or spread on your sandwich. Spending so much time at home, I needed to mix up my afternoon snack. I love roasted beets, so I thought why not turn it into a hummus! Beets are packed with many essential vitamins and minerals and low in calories and fat.
Ingredients:
1 can of chickpeas, drained and rinsed
2 beets or 1 can (I used canned, just easier)
3 cloves of garlic
2 tbsp balsamic vinegar
1-2 tbsp olive oil
Salt and pepper to taste
Directions:
Preheat oven to 400 degrees
Place beets and garlic cloves on a lined baking sheet and drizzle with 1 tbsp of balsamic vinegar, salt and pepper
Roast in the oven for 20-30 minutes
In a blender add chickpeas, roasted beets and garlic, remaining tbsp of balsamic vinegar, salt and pepper
Turn on blender and slowly add olive oil until preferred consistency
