Roasted Beet Hummus

Hummus is great as a snack or spread on your sandwich. Spending so much time at home, I needed to mix up my afternoon snack. I love roasted beets, so I thought why not turn it into a hummus! Beets are packed with many essential vitamins and minerals and low in calories and fat.

Ingredients:

  • 1 can of chickpeas, drained and rinsed

  • 2 beets or 1 can (I used canned, just easier)

  • 3 cloves of garlic

  • 2 tbsp balsamic vinegar

  • 1-2 tbsp olive oil

  • Salt and pepper to taste

Directions:

  • Preheat oven to 400 degrees

  • Place beets and garlic cloves on a lined baking sheet and drizzle with 1 tbsp of balsamic vinegar, salt and pepper

  • Roast in the oven for 20-30 minutes

  • In a blender add chickpeas, roasted beets and garlic, remaining tbsp of balsamic vinegar, salt and pepper

  • Turn on blender and slowly add olive oil until preferred consistency

  • Enjoy!
