White Chocolate Pumpkin Chickpea Cookies
Looking for something fun to make with your kids over Thanksgiving? Try these easy and healthy pumpkin chickpea cookies. They are a spin on my regular chickpea cookies but with a holiday flair. You can get creative and add your own flavor and ingredients. These cookies are healthy and delicious and can be made gluten free! You can have fun with these cookies and let your kids decorate them with the chocolate icing and craisins. A fun (and delicious) activity the whole family will enjoy!
Did you know pumpkin is one of the most nutrient dense vegetables in the squash family. Pumpkin is rich in dietary fiber and full of minerals such as potassium, vitamins such as B6, C and E and antioxidants such as beta-carotene with gets converted to Vitamin A and is used to support eye health. So not only is it a delicious flavor to add to these cookies but its nutritious as well!
Ingredients:
1 can chickpeas
1/3 cup pumpkin puree
¼ cup oat flour (or GF flour of choice)
2 tbsp peanut butter
1/3 cup brown sugar
2 tbsp unsweetened applesauce
2 tsp pumpkin pie spice
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
½ cup white chocolate chips
Optional Add Ins: dried cranberries and walnuts
Directions:
Preheat oven to 350 degrees
Line a baking sheet with parchment paper
Place all ingredients (except chocolate and add ins) in food processor or blender and blend until smooth
Fold in the optional add-ins
NOTE: I decided to melt the chocolate and ice the cookies once they cooled but you can also just fold them into the batter
Scoop batter into about tablespoon size rounds onto the baking sweet
Bake in the oven for 18-20 minutes
Let cool completely and ENJOY!
