Cucumber Bread
My future mother-in-law's garden had an overgrowth of cucumbers so she gifted me A LOT of them. I like cucumbers but there are only so many cucumber salads and sandwiches one person can make. So I decided to get creative and try something different. Why not make some bread? Besides, everyone knows how much I love hiding veggies in my baked goods :)
It may sound weird but I promise you, this cucumber bread is delicious!! It makes for an easy, healthy and tasty snack for any time of day! Don’t be turned off by the hidden veggies, you wouldn’t even know they were in there! Get creative and add your favorite mix-ins. Try nuts, berries, or even chocolate chips! There are so many ways to eat your veggies!
Ingredients:
2 eggs
1 cup sugar (I used coconut sugar)
1/2 cup applesauce
1 cup grated cucumber (pealed, de-seeded and with water squeezed out)
1 tsp vanilla
1 1/2 cups flour (I used whole wheat but feel free to use your favorite gluten free flour instead)
1 tsp baking soda
1 tsp salt
1/4 tsp baking powder
2 tsp cinnamon
1/2 cup chopped walnuts (optional)
Glaze (optional):
1/2 cup powdered sugar
1.5 tbsp milk (start with 1 and add more if needed based on preferred consistency)
Directions
Preheat oven to 350 degrees
In a large bowl whisk the eggs, applesauce, vanilla and sugar together until smooth
Grate the cucumber
Peel the cucumber, cut off both ends
Cut cucumber in half and with a spoon scoop out all the seeds
Using a box grader or food processor, grate the cucumber
Pour cucumber mixture onto a paper towel and squeeze out excess liquid
Add cucumber to wet ingredients and mix well
Add remaining dry ingredients to mixture and mix until all incorporated
Fold in nuts (if using)
Pour mixture into a parchment paper lined (or greased) loaf pan
Bake in oven for 50-60 minutes (until toothpick comes out clean)
Let cool for at least 15 minutes
While cooling, make the glaze by mixing the powdered sugar and milk together in a bowl
Once cool, pour glaze over top, slice and ENJOY!
