Chocolate Donuts with Hidden Veggies
Does anyone else have a chocolate obsession? I had an extra bag of spinach and instead of using it for dinner I, of course, had to make something sweet! What can I say, any excuse to make (and eat) more donuts!
What I love about most of my recipes is how versatile they are. I had some leftover spinach in my fridge that needed to be used up so I decided to make the zucchini donuts from my cookbook but use my leftover spinach instead. They came out GREAT! These donuts are so easy to make and you can use whatever you have in your kitchen. This time I used oat flour and spinach and dusted them with powdered sugar. Last time I used whole wheat flour and zucchini and drizzled melted chocolate on top. So many ways to mix it up and make them your own. Super easy to make and a great recipe to make with your kids!
Studies have shown that the more kids have a hand in the cooking process the more adventurous they will be when it comes to trying food. Cooking is also a great way to learn math, reading, and many other skills that are important to their development. So not only are these donuts nutritious and delicious, they are beneficial to your kids as well!
Ingredients:
3/4 cup of flour
1/4 cup cocoa powder
1/2 cup coconut sugar (or preferred sugar)
1/2 tsp baking soda
1/2 tsp salt
2.5 tbsp applesauce
1/3 cup milk
2 cups spinach (I used fresh, about half a bag)
1/2 tsp vanilla
1 tsp apple cider vinegar
1/4 cup chocolate chips
Optional powdered sugar for dusting on top
Directions:
Preheat oven to 350 degrees
In a blendor place all ingredients except vinegar, baking soda and chocolate chips and blend until smooth
Add in vinegar and baking soda and pulse a few times
Stir in chocolate chips
Divide batter evenly into a greased donut tin (these can also be made as muffins)
Bake in the oven for about 12 minutes
Let cool, remove from tin and dredge in powdered sugar
