Chocolate Chip Almond Flour Protein Cookies
I have been testing out many different recipes in order to find the best protein cookies and I think I finally perfected it! These cookies are not only delicious but they are great snack any time of the day. Filled with lots of good protein, they are great for a quick breakfast on the go, a good post workout treat, or just a delicious snack. They are gluten free, quick and easy to make and can be adapted to your favorite flavors.
Ingredients:
1 cup almond flour
1/3 cup vanilla protein powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup peanut butter
1/4 cup melted coconut oil
1 egg
1/4 cup maple syrup
1 tsp vanilla
chocolate chips (or any preferred mix-in of choice. Other options are nuts, peanut butter chips, M&Ms, dried fruit, etc)
Directions:
Preheat oven to 350 degrees
Line a baking sheet with parchment paper
In a medium bowl mix all the dry ingredients together
In a separate bowl mix all the wet ingredients until all incorporated
Add the wet ingredients Into the dry and mix well
Fold in chocolate chips (or other mix-ins)
Scoop dough onto cookie sheet about 1-2” apart (cookies wont spread much so don’t need too much space)
Bake for 10-11 minutes (until golden brown)
Remove from oven (option to sprinkle with a little sea salt)
Let cool for 5-10 minutes and ENJOY!
