Salmon Burgers with Tzatziki sauce
Salmon burgers are a great lunch or dinner option, they can be eaten warm with pita or on a hamburger bun or enjoyed cold on a salad. This recipes is super simple to make and great for the whole family. With its hidden veggies, protein and healthy Omega 3’s it’s something you can feel good about feeding your family. Ingredients for the Burgers
2 (6oz) cans of salmon
1 avocado
1/3 cup peas (I used frozen and defrosted in the microwave for 1 minute)
2 green onions
1 egg
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp pepper
Ingredients for the the Tzatziki Sauce
1 cup plain Greek Yogurt
1/2 cup diced cucumber
1 tbsp lemon juice
2 cloves of garlic
1 tbsp of fresh chopped dill
Salt and pepper to taste
Directions:
In a large bowl, mash avocado
Add green onion, peas, spices, egg and salmon and mix until well combined
Form 4 patties and place on a plate
Cover patties and refrigerate for 20-30 minutes (or overnight)
while patties are resting, make the sauce by mixing all the ingredients together in a bowl and keep in fridge until ready to serve
Heat large skillet over medium-high heat and add oil
Add burgers to skillet and cook until burger releases easily from skillet and is lightly browned (5-7 minutes), flip and cook on the other side until browned (4-5 more minutes)
Remove from heat and serve!
