Fig Rosemary Crackers (GF)
I am always looking for new snack ideas or things to munch on. Sometimes I want something sweet and sometimes salty. These crackers are the perfect combination of both. They are great on their own or as part of your fancy cheese plate. The best part is, these crackers are very easy to make, gluten free and filled with protein, vitamins and minerals. These crackers can be made with fresh or dried figs however, I used fresh. I love fresh figs and since they are in season, I had some that I needed to use up.
Figs are a very nutritious fruit. They are full of many vitamins and minerals but particularly high in fiber, potassium, calcium, copper and many antioxidants. Some of their potential health benefits include promoting digestive and heart health, as well as potentially managing blood sugar levels.
Ingredients:
1 cup Almond flour
½ cup oat flour (can sub for more almond flour)
1 tbsp fresh chopped rosemary
5 figs (I used fresh but can used dried), chopped
1 egg
1 tsp olive oil (use more if dough is too dry)
½ tsp. salt
Directions:
Preheat oven to 350
In a bowl mix flour, rosemary, salt and figs until all combined and figs are coated
Add egg and olive oil and mix until dough is formed (start with 1 tsp of olive oil, add more as needed for ingredients to combine and form dough).
Pour dough onto a parchment paper lined baking sheet
Put another piece of parchment paper on top of the dough and roll dough to form about 1/8 inch thick
Cut dough into 2-inch squares
Bake in the oven for 15-18 minutes (watch it after 15 min so it doesn’t burn)
Let cool and harden before breaking apart and ENJOY!
