Apple Cinnamon Granola
It’s officially fall which means lots of apple picking and harvest fruits and vegetables, fall produce is my favorite! In trying to keep with the fall theme, I decided to make some apple cinnamon granola. If you are looking for something to do with all those apples you picked, this granola is a great option because it’s made with fresh apples! It’s also easy to make, gluten free, low in sugar and delicious! It’s perfect with breakfast or as an afternoon snack, eaten alone or topped on your favorite yogurt or peanut butter toast!
Apples are a very popular fruit and for good reasons. There are so many health benefits of apples. They are a great source of fiber and Vitamin C and many antioxidants. The fiber in apples slows down your digestion which keep you fuller longer and also helps stabilize your blood sugar.
Cinnamon has many antioxidant and anti-inflammatory properties which can help lower the risk for many disease. It’s also commonly known for its blood sugar lowering qualities.
Ingredients
2 cups oats
2 tsp. cinnamon
1 tbsp flaxseed
2 tbsp shredded coconut
1 apple, Chopped
¼ cup applesauce
2 tbsp coconut oil
3 tbsp honey
1.5 tsp vanilla
1/8 tsp salt
Optional: Mixed nuts and raisins
Directions:
Preheat oven to 325 degrees
Line a baking sheet with parchment paper
In a medium bowl mix oats, cinnamon, flaxseed, shredded coconut and apple
In a separate bowl put coconut oil, honey and vanilla and microwave for 30 seconds so all melted. Stir to combine
Add applesauce to coconut oil mixture
Pour wet mixture over oats and stir until everything is combined and covered
Pour mixture onto the lined baking sheet
Bake in the oven for 45-50 minutes (stirring halfway through)
Remove from oven and let cool for at least 10 minutes until breaking up into pieces.
Store in an airtight container and enjoy as a snack or over your favorite yogurt or peanut butter toast!
