Lean & Green English Muffins
Don’t be scared by the green color. I know these look funny, but I promise they are delicious! The color comes from the spinach, it DOES NOT change the flavor, it just adds nutrients. A good way to get in some extra veggies in your day. (Great for kids as the color is fun and a sneaky way to get them to eat their greens). If the spinach does not appeal to you, you don’t have to use it (alternative option listed below). These muffins are Super Easy to make, they only take about 5 minutes and they can be made gluten free and vegan.
Ingredients:
2 Tbsp flour (I have used both whole wheat and almond, they both work and taste great)
2 Tbsp canned pumpkin puree
1 egg - Can be made vegan by using egg substitute such as flax egg (1 Tbsp flaxseed meal + 3 Tbsp water)
1/2 tsp baking powder
1/4 tsp salt
1/4 cup frozen spinach…If you don’t want to use spinach, substitute for 1 Tbsp of liquid of choice (I prefer almond milk but anything will work).
1 tsp sweetener of choice
1 tsp of cinnamon
* optional: everything bagel seasoning
Directions
Put all ingredients in blender and blend until smooth
Spray a microwave safe small cereal bowl with non-stick spray
Pour batter into bowl
If using, sprinkle with everything bagel seasoning
Microwave for 3 minutes (*if you don’t want to microwave you can bake it in the oven for about 15 minutes)
Remove from microwave, slice in half, pop in the toaster and then top with favorite ingredients
