2 Ingredient Banana Pancakes

There is something so satisfying and comforting about pancakes. They are a breakfast staple and almost every country has their own version. However, the standard recipe is considered more of an unhealthy indulgent full of fats, carbs and sugar. But with this recipe, you can now have this sweet breakfast treat and not feel bad about it. These pancakes are not only delicious and super easy to make, they are also gluten free, dairy free and guilt free! They only take about 5 minutes to make and the combination of fiber and potassium from the banana and protein from the eggs will help keep you full all morning.

Ingredients

  • 1 banana

  • 2 whole eggs + (1 egg white, optional)

  • Dash of cinnamon

  • Optional add-ins/toppings: fruit, nuts, chocolate chips,
    nut butter

Directions:

  • Mash banana in a bowl

  • Mix in 2 whole eggs

  • Whisk 1 egg white and fold it into the mixture (this extra egg white is not necessary it just makes the pancakes fluffier)

  • Add in cinnamon

  • Heat olive oil in pan over medium heat

  • Spoon batter into hot pan

  • If using, add in mix-ins

  • Let cook for about 2 minutes (batter will start to bubble)

  • Flip and cook for another minute or 2 (until golden brown)

  • Remove from heat and Enjoy!

Top pancakes with nut butter, berries, syrup or honey
