Chickpea, Nut Butter Cookies

These cookies are so delicious and healthy, they can be enjoyed anytime of day! Great as a quick breakfast, mid-day snack, after dinner dessert or an excellent post workout treat. During a workout our muscles use up our glycogen stores for fuel. Glycogen is our body’s primary source of energy during a workout, which is why it is important to replenish it. The best way to rebuild our glycogen stores and build strong muscles is with a combination of good carbohydrates and protein. Protein helps repair and build muscle and the carbs help with recovery by building up glycogen stores that were depleted during the workout. In addition to being a great combination of good carbohydrate and healthy proteins these cookies are also gluten and dairy free (and vegan depending on the sweetener you use).

INGREDIENTS

  • 1 can chickpeas (drained and rinsed)

  • 1/2 cup nut butter

  • 2 tsp vanilla

  • 1 tsp cinnamon

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1/3 cup maple syrup/ honey (or sweetener of choice)

  • 1/3 cup mix in (dark chocolate chips, nuts, raisins or blueberries)

     

DIRECTIONS:

  • Preheat oven to 350

  • Blend all ingredients together (except the mix-ins, add those in after blended)

  • Divide mixture evenly onto a cookie sheet lined with parchment paper

  • Bake for 20-25 minutes or until lightly browned

    ** No time or desire to bake, that’s ok! Since there are no eggs, it’s also delicious just as cookie dough**
