PB&J Granola
Granola is a great snack or addition to a meal, however many of the store bought versions are filled with sugars, oils and unnecessary calories. That is why I like to make my own quick, easy and healthy version. This homemade granola is low in sugar, very easy to make and filled with many nutritional benefits. Oats are a complex carbohydrate filled with fiber and iron and the peanut butter and nuts are full of protein and heart-healthy unsaturated fats. This granola is great on top of yogurt, sprinkled over peanut butter toast with banana or just as a quick snack to keep in your bag when you’re on the go.
Ingredients
1/2 cup peanut butter (or any nut butter)
1/4 cup jam (I made my own, recipe below)
2 tbsp maple syrup or honey
1.5 cups of old fashioned oats
1 tsp salt
1 tsp cinnamon
*Optional: Nuts, dried fruit, coconut
Directions
Preheat oven to 325 degrees
Line a baking sheet with parchment paper
Microwave peanut butter and maple syrup/honey in microwave safe bowl for about 30 seconds until smooth
Stir in jelly
Add oats, cinnamon, salt and nuts. Mix until combined
Spread mixture onto baking sheet
Bake in the oven for about 30 minutes, stirring halfway through so it cooks evenly
Remove from oven, add dried fruit, coconut flakes, chocolate chips or anything else you like in your granola, let cool completely and then enjoy!
Jam recipe
Pour 2 cups of frozen berries in a saucepan, cover and bring to a boil (If using more tart berries, add a spoon of sweetner or choice)
Let cook for about 5 minutes and then remove lid, lower heat to a simmer
Let berries simmer on low for about 5 minutes to thicken. Turn off heat and let sit for another 5 minutes
