PB&J Granola

Granola is a great snack or addition to a meal, however many of the store bought versions are filled with sugars, oils and unnecessary calories. That is why I like to make my own quick, easy and healthy version. This homemade granola is low in sugar, very easy to make and filled with many nutritional benefits. Oats are a complex carbohydrate filled with fiber and iron and the peanut butter and nuts are full of protein and heart-healthy unsaturated fats. This granola is great on top of yogurt, sprinkled over peanut butter toast with banana or just as a quick snack to keep in your bag when you’re on the go.

Ingredients

  • 1/2 cup peanut butter (or any nut butter)

  • 1/4 cup jam (I made my own, recipe below)

  • 2 tbsp maple syrup or honey

  • 1.5 cups of old fashioned oats

  • 1 tsp salt

  • 1 tsp cinnamon

  • *Optional: Nuts, dried fruit, coconut

Directions

  • Preheat oven to 325 degrees

  • Line a baking sheet with parchment paper

  • Microwave peanut butter and maple syrup/honey in microwave safe bowl for about 30 seconds until smooth

  • Stir in jelly

  • Add oats, cinnamon, salt and nuts. Mix until combined

  • Spread mixture onto baking sheet

  • Bake in the oven for about 30 minutes, stirring halfway through so it cooks evenly

  • Remove from oven, add dried fruit, coconut flakes, chocolate chips or anything else you like in your granola, let cool completely and then enjoy!

Jam recipe

  • Pour 2 cups of frozen berries in a saucepan, cover and bring to a boil (If using more tart berries, add a spoon of sweetner or choice)

  • Let cook for about 5 minutes and then remove lid, lower heat to a simmer

  • Let berries simmer on low for about 5 minutes to thicken. Turn off heat and let sit for another 5 minutes
