Chocolate Chip, Banana, oat Muffins (GF)

These muffins are not only delicious but they are good for you too! Made only of oats, bananas, eggs and lightly sweetened with natural sweetener. You can feel good about eating these and serving them to your family. Top with some peanut butter and banana slices or add to your bowl of yogurt and you have a well balanced, nutritious breakfast or snack.

I love baking but hate the mess and multiple dishes that usually comes with it. However, these muffins are incredibly easy to make, you won’t even dirty any bowls! Everything just gets thrown into a blender and then poured directly into muffin tins. Couldn’t be quicker or easier.

Ingredients:

  • 2 cups oats

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 3 ripe bananas

  • 1/4 cup of honey (or maple syrup)

  • 2 eggs (or flax eggs)

  • 2 Tbsp applesauce

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 1/4 cup chocolate chips and/or nuts

Directions:

  • Preheat oven to 350 degrees

  • Line muffin tins with liners

  • Put all ingredients except for chocolate chips and nuts in blender

  • Blend until smooth

  • Stir in chocolate chips/nuts

  • Pour mixture evenly into muffins tins

  • Bake for 20 minutes

  • Let cool and Enjoy!
