Shakshuka

Shakshuka is an easy and healthy breakfast option. Filled with veggies and eggs, this is a great way to start your day. It’s also something easy to make for a group. You can make it as big or as small as you need. Use a smaller pan and 2 eggs for a single serving and then increase the size and quantity depending on how many you are serving. It looks fancy, but this meal is quick and easy and sure to impress!

Ingredients:

  • 1 small onion

  • 2-3 cloves of garlic

  • 1 cup mushrooms

  • 1 bell pepper

  • 1 can crushed tomatoes

  • 4 eggs

  • 1 tsp crushed red pepper

  • salt and pepper to taste

  • feta cheese

  • basil

Directions:

  • Preheat oven to 350 degrees

  • Heat oil in a large skillet

  • Add mushrooms, onion and garlic, let cook down for about 5-10 minutes

  • Add peppers and let veggies continue to cook for about 5 more minutes

  • Add tomato sauce and spices and simmer for a few minutes

  • Crack eggs directly into the sauce

  • Sprinkle with feta

  • Put in oven and let cook for about 5-10 minutes, until eggs are done to your liking

  • Sprinkle with basil and serve!
