Hidden Veggie Pancakes

My morning obsession. Looking for an easy, delicious and nutritious start to your day, try these pancakes. They are filled with protein, complex carbs and nutrients from the veggies a great way to kick start your brain and body!

Cauliflower is an extremely healthy vegetable with many nutritional benefits. It contains some of almost every vitamin and mineral your body need. It’s high in fiber and good source of antioxidants, some of which may reduce inflammation and help protect against some diseases.

Ingredients:

  • 1/4 cup frozen riced cauliflower

  • 1 banana

  • 1 tbsp flour (I like to use coconut flour but any type will work)

  • 1 tsp baking powder

  • 1/4 tsp cinnamon

  • 1 egg

  • blueberries

Directions:

  • Microwave cauliflower for 1 minutes

  • Add banana and mash until all combined

  • Add cinnamon, flour and baking powder and mix well

  • Add in egg and mix until all combined

  • Heat a skillet on high and add 1 tsp of butter or coconut oil (I use coconut oil but butter will work great too)

  • Turn heat down to medium and divide batter evenly onto skillet

  • Add blueberries (or other favorite mix-ins)

  • Let pancakes cook for about 3 minutes, until they start to bubble, and then flip them

  • Cook for an additional 2 minutes

  • Remove from heat, top with favorite toppings (peanut butter, more fruit, syrup, ect.) and ENJOY!
