Chocolate, PB, Pumpkin Muffins

Fall is here and that means it’s time for everything Pumpkin! Pumpkin is not only a popular food (& flavor) it's also very good for you. Pumpkin is high in vitamins and minerals while being low in calories. It’s also a great source of beta-carotene, potassium, vitamin C, fiber and antioxidants. Pumpkin is also very versatile and can be used in many different ways. Even though Pumpkin has become #basic, feel good about enjoying this delicious fruit. 

These muffins are not only full of vitamins and minerals from the pumpkin but they are low in sugar, high in protein, and just happen to be gluten free! These muffins are very easy to make and delicious anytime of day!

Ingredients:

  • ¼ cup pumpkin puree      

  • ¼ cup nut butter

  • ¼ cup applesauce

  • 2 tbsp cocoa powder

  • ¼ cup honey

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • ½ tsp pumpkin pie spice

  • ¼ tsp vanilla extract

  • ¼ tsp salt

  • 1 egg

  • ¼ cup chocolate chips (optional)

 

Directions

  • Preheat oven to 350

  • Mix all ingredients together in a bowl until well combined

  • Divide evenly into lined muffin tins

  • Bake for about 25 minutes (until toothpick comes out clean)

  • Let cool and enjoy
