Apple Oat Bread
I love any recipe where you can just throw all the ingredients in a blender and then into the oven to bake. This apple oat bread is super easy and very nutritious. You can make it as a loaf or muffins (see directions below for muffin cook time). Top with some nut butter and dash of cinnamon and you have a great start to your day.

The type of fiber in apples is called pectin which acts as prebiotic, this means it feeds the good bacteria in your gut. Apples also contain polyphenols, which may have numerous health benefits such as being linked to lower blood pressure and stroke risk and lower risk of type 2 diabetes.
Ingredients
2 ripe bananas
3 eggs
1/4 cup apple sauce
2 cups oats
1/4 cup maple syrup (or honey)
1 tbsp apple cider vinegar
2 tbsp flax meal (optional)
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/3 cup diced apples
1/3 cup chocolate chips (optional)
Directions
Preheat oven to 350 degrees
Place all ingredients except for apples and chocolate chips in blender and blend until smooth
Fold in chocolate chips and apples
Pour into a greased loaf pan
Bake for 35 minutes (until toothpick comes out clean)
** To make as muffins, reduce the cooking time to 20 minutes
