Peanut Butter, Banana, Oat Bread

Looking for a nutritious, delicious and easy breakfast for on the go? Try this peanut butter, banana, oat bread! The combination of complex carbs and protein is the perfect balanced breakfast to start your day. Complex carbs provide your body with their primary source of energy therefore they are a great way to kickstart your body and brain. Oats and bananas also contain a lot of fiber which help fill you up and keep you full longer.

Ingredients:

  • 2 cups oats

  • 4 bananas

  • 1 cup peanut butter (or other nut butters)

  • 1/4 cup honey (or other sweetener of choice)

  • 2 tsp baking soda

  • 1/4 tsp salt

  • Chocolate chips

  • Optional: Nuts, cinnamon

Directions:

  • Preheat oven to 350 degrees

  • Grease a 9x5 loaf pan

  • Mash bananas in a bowl

  • Mix in peanut butter and honey

  • In a food processor or blender, blend oats, salt and baking soda

  • Mix dry ingredients into wet ingredients

  • Fold in chocolate chips and any other optional mix-ins

  • Pour mixture into loaf pan

  • Top with additional chocolate chips, banana slices and/or peanut butter drizzle

  • Bake in oven for about 30 minutes (or until toothpick comes out clean)

  • Let cool for 5 minutes and then ENJOY!
