Fudgy Black Bean Brownies with PB Swirl
What better way to get more veggies into your diet than through delicious baked goods! These brownies are really easy to make and are filled with protein from the beans and vitamins and minerals from the zucchini. I know it may sound weird to make brownies out of beans and zucchini but I promise they are fudgy, delicious and nutritious! You would never know they are made from beans or good for you.
Nutritional benefits of black beans: Black beans are a great source of fiber, protein, potassium and folate. Folate is the naturally occurring form of vitamin B9 which is necessary for the production of red blood cells and helps with tissue growth and cell function. Black beans actually contain more fiber and magnesium than any other bean.
Nutritional benefits of zucchini: Zucchini contains a variety of vitamins, minerals, and beneficial plant compounds. In particular, zucchini contains ample amounts of Vitamin A which may support your vision and immune system. Zucchini also contains several antioxidants that may provide various health benefits. The highest levels are found in the fruit’s skin.
Ingredients:
1 can black beans (drained and rinsed)
1 zucchini (grated- squeeze out water)
1 ripe banana
3 tbsp cocoa powder
½ cup oats
¼ tsp salt
1/3 cup honey (or sweetener of choice)
¼ cup apple sauce
2 tsp vanilla extract
1 tsp baking powder
1/2 cup chocolate chips
2 tbsp creamy peanut butter
Directions
Preheat oven to 350
Put all ingredients except chocolate chips and peanut butter in blender and blend until smooth
Stir in chocolate chips
Pour into a lined 8x8 baking dish
Put a dollop of peanut butter in each corner
With a toothpick swirl the peanut butter around
Place in oven, bake for 40-45 minutes
Let cool before slicing and enjoy
