Cauliflower Rice Breakfast Bowl
Ingredients:
¾ Cup riced cauliflower
1 tsp olive oil
¼ cup diced onion
1/3 cup of mushrooms*
½ cup spinach or preferred dark leafy green*
½ cup cherry tomatoes*
2 eggs
Avocado (for topping)
* can use any vegetables of choice, I also like to use bell peppers, squash and other seasonal options
Directions:
Heat olive oil in a medium saucepan.
Add in onions and mushrooms. Let sauté for about a minute
Add cauliflower rice, tomatoes, spinach and any other veggies
Season with salt, pepper and garlic powder
Sautee for about 7 minutes or until vegetables are cooked to your liking
Add egg (I like to scramble eggs into the “rice” mixture but you can also top with a poached or sunny side up egg instead if you prefer)
Transfer to bowl and top with avocado and hot sauce (toppings are optional)
