Cauliflower Rice Breakfast Bowl

Ingredients:

  • ¾ Cup riced cauliflower

  • 1 tsp olive oil

  • ¼ cup diced onion

  • 1/3 cup of mushrooms*

  • ½ cup spinach or preferred dark leafy green*

  • ½ cup cherry tomatoes*

  • 2 eggs

  • Avocado (for topping)

* can use any vegetables of choice, I also like to use bell peppers, squash and other seasonal options

 Directions:

  • Heat olive oil in a medium saucepan.

  • Add in onions and mushrooms. Let sauté for about a minute

  • Add cauliflower rice, tomatoes, spinach and any other veggies

  • Season with salt, pepper and garlic powder

  • Sautee for about 7 minutes or until vegetables are cooked to your liking

  • Add egg (I like to scramble eggs into the “rice” mixture but you can also top with a poached or sunny side up egg instead if you prefer)

  • Transfer to bowl and top with avocado and hot sauce (toppings are optional)
