Banana Oat Bars (GF)

Looking for an easy and healthy snack idea? Try these gluten free banana oat bars. They are very easy to make, all you need is a blender and sheet pan! Full of oats, bananas and just a little sugar they are a nutritious treat you can feel good about feeding your family. Top with your favorite nut butter or Greek Yogurt for a well rounded breakfast or snack. They are easy to grab on the go and fun to make with the kids. You can make them your own by adding in your favorite toppings or mix-ins. Healthy baking has never been easier!

Ingredients:

  • 5 ripe bananas

  • 3 cups oats

  • 3/4 cup brown sugar (or coconut sugar)

  • 1/4 cup unsweetened applesauce

  • 1/4 cup milk (I used unsweetened almond milk but use whatever you have)

  • 2 eggs

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • optional add ins: 1 cup chocolate chips, nuts, berries, or dried fruit

Directions:

  • Preheat oven to 350 degrees

  • Line a 10x15 baking sheet with parchment paper (or grease with butter or oil)

  • In a blender add 2 cups of the oats and pulse a few times

  • Add all remaining ingredients except the mix-ins and remaining 1 cup of oats

  • Blend until smooth and all incorporated

  • Add in last cup of oats and mix with a spoon

  • Fold in optional mix ins

  • Pour batter into lined baking sheet

  • Bake in the oven for 20-23 minutes (until a toothpick comes out clean)

  • Let cool before slicing and ENJOY!
