Whole Wheat Banana Avocado Muffins

I know what you’re thinking, avocado in muffins?!! However, I promise you can’t taste the avocado, it just helps make the muffins extra moist! It also has an added benefit of providing some healthy fats making these healthy muffins even more nutritious. These muffins are very simple to make and you can mix them up by adding in of your favorite mix ins. These would be great with chocolate chips (because what isn’t better with chocolate) or with berries or nuts too! These muffins are a nutritious snack you can feel good about eating!

Ingredients:

  • 1 avocado

  • 3 ripe bananas

  • ½ cup milk

  • 4 tbsp maple syrup (or honey)

  • 1 tsp vanilla

  • 2 eggs

  • 2 cups whole wheat flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • Optional: 1/4 cup of blueberries, nuts, chocolate chips or any of your other favorite flavors

Directions:

  • Preheat oven to 350 degrees

  • In a medium bowl, mash the avocado and 2 bananas (saving the 3rd banana to fold in later)

  • Add milk, maple syrup, vanilla and eggs and mix until all combined

  • Add in whole wheat flour and baking soda

  • Chop up remaining banana and fold into batter (this is also where you can add nuts, chocolate chips, berries or any of your favorite mix-ins)

  • Grease a muffin tin with butter or coconut oil

  • Using an ice cream scoop, scoop batter evenly into tins

  • Bake in the oven for 17-20 minutes (until toothpick comes out clean)

  • Let cool and enjoy!
