Roasted Carrot Sriracha Hummus

Hummus is a very nutritious and verstitle food. It is a great source of plant based protein as well as being high in fiber. Hummus can be eaten as a snack with veggies or crackers, or spread on a sandwich instead of other high-calorie spreads. Carrots are full of nutrients, low in calories and linked to many health benefits. They have been associated with heart and eye health, improved digestion and even weight loss. This hummus is so easy and delicious, it is sweet from the roasted carrots with a kick from the sriracha. This is a great dip and spread that is sure to be a crowd pleaser!

Ingredients:

  • 4 carrots

  • 1 can chickpeas

  • 1-2 cloves of garlic

  • 1 lemon, juiced

  • 1 tbsp of sriracha

  • 1/4 tsp cumin

  • Salt and pepper to taste

  • 1 /4 cup olive oil and/or water (or other liquid of choice, I have also used almond milk)

Directions:

  • Preheat oven to 415 degrees

  • Cut carrots, toss with a little olive oil, salt, pepper and cumin

  • Roast carrots for about 35-40 minutes (time will depend on thickness of carrots- want them to be soft)

  • In a blender or food processor add all ingredients except the water/oil

  • Turn on blendor and slowly add olive oil or water as needed until desired thickness

  • Transfer to a dish and enjoy!
