Nut-Free, Dairy-Free, Basil, Edamame Pesto
This pesto is so versatile, it can be used on so much more than just pasta. It’s guilt free and very flavorful! I love making a big portion and using it all week. It’s great on fish or chicken, baked over potatoes and, of course, as a pasta sauce. Not only is this pesto guilt-free but it's full of nutrients. Edamame is not only a great source of protein but it's also full of healthy fiber, antioxidants and Vitamin K. And basil has been known to be an anti-inflammatory and a good source of Magnesium and Vitamin A. So feel good about eating this sauce!
Ingredients:
1 cup of fresh basil
1 cup of shelled edamame beans, thawed (frozen peas work as well)
1 tsp of ginger
1-2 garlic cloves chopped
½ lemon, juiced
½ tsp fish sauce (If you want to make it vegan you can leave this out)
¼ cup vegetable broth (more or less depending on the thickness you prefer)
2 tbsp dairy-free milk (I prefer coconut or almond)
¼ tsp red pepper flakes
Salt and pepper to taste
Directions
Put everything in a small food processor or blender and mix until smooth
