Cottage Cheese Oat Muffins (with Hidden Pees)
Like many toddlers, one day my son will eat everything I give him and the next he won't touch anything but fruit. That's why I came up with this recipe. These muffins were a huge hit both for him and for me. I was able to give him something he enjoyed (he devoured 2 in one sitting) that also made me feel good about what he is eating!
Cottage cheese has been on the rise lately not only because it's so versatile but it has many nutritional benefits. It is rich in protein, calcium and other vitamins and minerals that make a great addition to a healthy diet.
Adding peas is not necessary for this recipe but I like to find any opportunity I can to add vegetables, especially when baking for my toddler. The peas don't change the flavor and you really wouldn't know they were there so why not add a little extra nutrients. Peas are very nutritious and contain several vitamins, minerals and antioxidants. They’re also high in fiber and protein. I used frozen peas and microwaved them for about a minute, I let them cool and then added them to the blender before the rest of the ingredients to make sure they were really broken down into the batter.
Ingredients:
1 Cup of Cottage Cheese
2 eggs
1 1/4 cups of Oats
1 cup of pees (I used frozen and microwaved for 1 minute)
1/4 cup of Chia Seeds
1/4 cup maple syrup
2 tsp baking powder
2 tsp of cinnamon
1 tsp of vanilla
1/4 tsp of salt
1/2 cup mix ins of choice (chocolate chips, berries, dried fruit, nuts, bananas)
Directions:
Pre-heat oven to 350 degrees
Grease or line muffin tins
In a blender, put pees and cottage cheese and blend for about 30 seconds
Add all remaining ingredients and blend until smooth (about another 30 seconds)
Fold in your mix-in of choice
scoop batter evenly into muffin tins
Bake in the oven for about 22-25 minutes
Let cool before serving and ENJOY!
