Carrot and Date Oat Bread (GF)
Breakfast is an important part of the day, particularly for your kids. A good breakfast filled with complex carbs and protein will jump start their brains and their bodies. However, sometimes coming up with ideas that are easy and healthy can be difficult. These carrot, date, oat bars are the perfect solution. They are easy to make, something fun to do with your kids and the perfect grab and go breakfast treat filled with all the healthy nutrients you and your kids need to start the day strong. Make them over the weekend and then breakfast is ready all week long. Top with some nut butter, cream cheese, Greek yogurt or even serve on the side of some scrambled eggs and this filling breakfast will keep you satisfied and your brains and bodies fueled to get the day started off right!
Ingredients
1 1/2 cups oats
1 ¼ cups GF flour (or any flour of choice)
1 ½ tsp baking powder
½ tsp baking soda
2 ½ tsp cinnamon
¼ tsp salt
1 tbsp coconut oil (melted)
2 eggs
2 tsp vanilla extract
1 ripe banana
½ cup maple syrup
½ cup milk
2 carrots, grated
1/2 cup chopped dates
Directions
Preheat oven to 350 degrees
Grease or line a 9x9 baking dish
In a bowl, whisk together oats, flour, baking powder, baking soda, cinnamon and salt
In a separate bowl, mash the banana then whisk in eggs and add in coconut oil, vanilla, and maple syrup. Mix well until there are no clumps
To the egg mixture, slowly mix in oat mixture and milk, alternating between each one and stirring until incorporated
Fold in carrots and dates
Pour batter into baking dish
Bake for 25-30 minutes. Cool completely in pan before slicing and then ENJOY!
