Banana Bread Cookies
I think I have a banana bread addiction. Every week I “accidently” buy too many bananas that I (somehow) end up with over-ripe bananas that need to be used up immediately. Whoops? Instead of going for the typical banana bread, today I decided to try some banana bread cookies. These soft bake cookies are the perfect combination between a cookie and a muffin top. They were so easy to make and a delicious and healthy snack for any time of day! If you too find yourself with too many bananas, give these cookies a try!
Ingredients:
3 ripe bananas
2 tbsp applesauce
2 tbsp milk (I used almond milk)
1 egg (beaten)
1 tsp vanilla extract
1/3 cup brown sugar
1 + 1/3 cup whole wheat flour
½ tsp baking soda
1 tsp cinnamon
¼ tsp salt
½ cup dark chocolate chips
Directions:
Preheat oven to 350 degrees
Line a baking sheet with parchment paper
In a medium bowl mash bananas
Add applesauce, milk, vanilla and beaten egg and mix until all combined
Add flour, brown sugar, baking soda, cinnamon and salt and mix until combined
Fold in chocolate chips
Using a spoon or ice cream scoop, scoop batter onto the lined baking sheet about 2 inches apart
Bake in oven for 10 minutes, let cool completely and ENJOY!
