Banana Bread Cookies

I think I have a banana bread addiction. Every week I “accidently” buy too many bananas that I (somehow) end up with over-ripe bananas that need to be used up immediately. Whoops? Instead of going for the typical banana bread, today I decided to try some banana bread cookies. These soft bake cookies are the perfect combination between a cookie and a muffin top. They were so easy to make and a delicious and healthy snack for any time of day! If you too find yourself with too many bananas, give these cookies a try! 

Ingredients:

  • 3 ripe bananas

  • 2 tbsp applesauce 

  • 2 tbsp milk (I used almond milk)

  • 1 egg (beaten) 

  • 1 tsp vanilla extract 

  • 1/3 cup brown sugar

  • 1 + 1/3 cup whole wheat flour 

  • ½ tsp baking soda

  • 1 tsp cinnamon 

  • ¼ tsp salt 

  • ½ cup dark chocolate chips 


Directions:

  • Preheat oven to 350 degrees

  • Line a baking sheet with parchment paper 

  • In a medium bowl mash bananas 

  • Add applesauce, milk, vanilla and beaten egg and mix until all combined 

  • Add flour, brown sugar, baking soda, cinnamon and salt and mix until combined

  • Fold in chocolate chips 

  • Using a spoon or ice cream scoop, scoop batter onto the lined baking sheet about 2 inches apart

  • Bake in oven for 10 minutes, let cool completely and ENJOY!
